Marinated Cheese RangeOur cheeses are marinated in unfiltered extra virgin olive oil from the University's own olive grove. When refrigerated, it is normal for the oil to solidify, so it should be removed from the fridge at least 30 minutes before use. FettaFetta is a traditional Greek cheese made from goat or sheep milk. Combining our own locally produced, high-quality cow milk with 30% goat milk, the Fetta we have created is magnificent. Fetta with Australian Native MarinadeIn keeping with our unique range of Australian native flavours, we have developed a marinade for our Fetta which has a superb depth of flavour that easily rivals traditional Fetta. Our marinade combines the flavours of pepperleaf, lemon myrtle, and lemon aspen with the University's own extra virgin olive oil. Marinated LabnehLabneh is a traditional Lebanese soft cheese made from sheep or goat milk. At CSU, we add 35% goat milk to the Riverina's own high quality milk. The Labneh is hand-shaped and then rolled in our special Australian native flavours and extra virgin olive oil marinade. The probiotic bacteria used to create the cheese makes it extremely healthy for you too (L.acidophilus: Bifidobacterium: S.thermophilus). Wildfire Spice As the name suggests, this is a spicy mixture that flaunts Australian native flavours such as pepperberry, pepperleaf and lemon myrtle. Australian Rainforest Rub This unique spice mix of lemon myrtle, lemon aspen and macadamia nuts gives the Labneh a nutty lemon flavour. |
